BBQ CAULIFLOWER & CHICKPEA VEGGIE BURGERS

Image
BBQ CAULIFLOWER & CHICKPEA VEGGIE BURGERS Tons of delicious BBQ flavor packed into these easy veggie burgers! Everyone will enjoy them! I feel like I sound like a broken record, but things have been busy around here lately! We went on a trip to Iowa to visit my husband’s family and then a few days after we got back, my 8 month old got really sick with his first virus. Then, I got sick with a bad cold and then we had a friend come visit for a few days. And, then my sister and her boyfriend came to visit. Thankfully, both Eli and I were better by that visit! My sister hadn’t seen Eli since the day after he was born and he was in the NICU so it wasn’t very easy to hold him. She had told me that her and her boyfriend had made my BBQ Cauliflower and Chickpea Tacos on one of their first dates, so I thought it would be fun to make a variation of that recipe on their first night here. The weather has been perfect here lately and we’ve been really enjoying sitting out on the porch in the ev...

Easy Salmon and Potato Foil Packets

Image
Easy Salmon and Potato Foil Packets One of the very first meals I learned to cook for my husband was this one. He loves salmon and potatoes and nearly 20 years later, nothing has changed. The recipe is so easy that even a totally inexperienced cook will look like a hero and it’s ready in 30 minutes. Simply place thinly sliced potatoes in a mound on a sheet of foil, top with salmon, olive oil, the juice of an orange and a lemon, seal up the foil, and bake. It’s a foolproof recipe as long as you slice the potatoes very thin so they cook through in the same amount of time it takes the salmon to cook. INGREDIENTS: 1 medium potato, sliced into very thin rounds about 1/16th-inch thick, divided about 4 tablespoons olive oil, divided salt and pepper to taste, divided 2 salmon filets, about 6 ounces each 1 large orange, halved 1 lemon, halved DIRECTIONS: Preheat oven to 400F. To a 12-inch long sheet of foil (I use Reynold’s Heavy Duty Non-Stick), add half the potato slices in a pile in the cent...

BEEF AND TOMATO MACARONI SOUP

Image
BEEF AND TOMATO MACARONI SOUP Leaves are falling (or at least tourists are dwindling here in California), so it must be fall! This simple but satisfying, hearty Beef and Tomato Macaroni soup will be a repeat visitor to your dining table when the temperatures drop and appetites grow. Time savers equals life savers in the kitchen, and a big pot of warm, soul-soothing soup is one of my fall favorites. My Beef and Tomato Macaroni soup, basically comfort in a bowl, fits the bill for sure, and you’re likely to find some bubbling away on the stovetop in my kitchen on any given Sunday. This is a hearty soup with a thick, tomato-filled broth full of tender macaroni and beef, a real stick-to-your-insides meal that will give you plenty of energy t...

Oven Roasted Chicken with Lemon Rosemary Garlic Butter

Image
Oven Roasted Chicken with Lemon Rosemary Garlic Butter Searching through cookbooks, leafing through food magazines and trolling through food blogs proves one fact over and over again: Cooks love making recipes with chicken. While the boneless chicken breast seems to be the star in most recipes, the whole bird cannot be ignored. There’s nothing quite like a juicy hen, perfuming the whole house, to get the salivating started. This whole roasted chicken recipe is like a butter infused invitation to belly up to the Sunday dinner table. But it’s so easy you could totally make it any day of the week.  Chicken on the bone. Chicken with skin. Those two things give chicken a flavor all on its own. But when you layer that baby bird with the soft, buttery mix of garlic, lemon and rosemary a totally new flavor permeates our chicken-little under, and over, the skin. And that skin, oh that lovely, golden skin. Butter baby. It does the trick. About the recipe Use Real® butter for this recipe, eit...

Crispy Sheet Pan Gnocchi and Veggies

Image
Crispy Sheet Pan Gnocchi and Veggies A package of gnocchi from the store has always been one of our favorite easy dinners, but now it just got a whole lot easier. That's because we discovered you don't even actually have to boil the gnocchi in order to make it for dinner. Toss them directly from the package onto a sheet pan with a slew of veggies, roast them for 20 minutes, scoop into bowls, and dig in. Seriously — that's it. It's a game-changing way to make a go-to weeknight meal even more of a win. The Easiest Way to Make Gnocchi Dinner Make this sheet pan dinner an immediate addition to your weeknight roster. Roasting the gnocchi instead of boiling them won't give you that light, dumpling texture you're used to, but it arguably makes them even better. They get crispy and browned on the outside — almost like roasted potatoes — while remaining chewy and tender on the inside. The tomatoes are crucial here, as they pop while they roast, creating just a little bit...
